INGREDIENTS

1/3 cup granulated sugar
2 tablespoons granulated sugar
5 ounces semisweet chocolate, chopped finely

1/16 teaspoon salt
2 tablespoons butter
Confectioners’ sugar, for garnish

INSTRUCTIONS

  1. Butter and sugar 6 small ramekins or soufflé molds
  2. Preheat oven to 375°F
  3. Combine chocolate and butter in a saucepan and melt over low heat (it is important not to burn the chocolate)
  4. Remove from heat once melted and whisk in the egg yolks, then pour into a large bowl
  5. Beat the egg whites with salt in a large bowl until stiff, glossy peaks form
  6. Gentle whisk 1/3 of the beaten egg whites into the chocolate, with a rubber spatula fold the remaining egg whites into the chocolate
  7. Pour into prepared ramekin/soufflé mold and level with a spatula
  8. Bake for 10-15 minutes until the soufflé has risen halfway above the top of the mold and is springy to the touch
  9. Dust liberally with the confectioners’ sugar and serve immediately

Soufflé has a reputation of deflating quickly, so serve immediately. Bon appétit!
